Black Rice + Edamame Bowl, Miso-Sesame Dressing
The highest-fiber rice there is, under edamame and a sharp miso-sesame dressing — the whole-grain backbone of the week's lunches.

Method
The week’s grain workhorse. Black rice cooks 1 : 1.5 with water in about 35–40 minutes, keeps its bite for days, and brings ~4–5g of fiber per cooked serving — nothing else in the rice family is close. Edamame adds protein, the miso-sesame dressing makes it disappear, and a soft egg or flaked fish on top turns it into dinner.
Method
1. Black Rice
Rinse the rice, then cook 1 part rice : 1.5 parts water for 35–40 minutes. Rest 10 minutes off the heat before serving — it finishes setting up.
2. Edamame
Cook the shelled edamame until tender, then drain.
3. Dressing
Whisk the white miso, rice vinegar, sesame oil, maple, and grated ginger until smooth.
4. Bowl
Bowl the rice and edamame, spoon over the dressing, and finish with scallions and sesame seeds. Top with a soft egg or flaked fish if you want the full meal.
Notes
- Black rice is the highest-fiber rice (~4–5g fiber per cooked serving) — but it's still a whole-grain portion, not a bottomless bowl. Keep to roughly ¾–1 cup cooked per serving.
- The optional egg or flaked fish turns this from a side into the main — that's the pescatarian version.
- Batch note — cook a full grain batch on Sunday; this bowl and the trout salad share it.
