Method
The fix for the gray-green ring that boils into hard-cooked eggs. High pressure for a few minutes, a short natural release, then straight into ice water — yolks stay yellow, whites stay tender, and the batch keeps all week for bowls, salads, and breakfasts.
Method
1. Set Up
Pour 1 cup water into the pressure cooker and set the eggs on a trivet or in a steamer basket.
2. Cook
4–5 minutes at high pressure — 4 for jammy yolks, 5 for fully set.
3. Release
Let it natural-release for 5 minutes, then release any remaining pressure.
4. Ice Bath
Straight into ice water for 5+ minutes. This stops the cooking dead — it’s the step that keeps the yolks yellow.
5. Store
Keep them unpeeled in the fridge for up to 1 week, peeling as you eat.
Notes
- The gray ring is iron meeting sulfur when eggs sit hot too long — the 5-minute natural release and the immediate ice bath are what prevent it. Skip either and it shows up.
- Store unpeeled in the fridge for up to 1 week. They peel easier after a night in the shell anyway.
- 4 minutes gives a jammy yolk, 5 minutes sets it fully. Both stay yellow.
